BEANS "FROM SCRATCH" WITH MAPLE AND BIRCH SYRUP


Yield: 3 liters of delicious homemade beans


INGREDIENTS

  • 1 kg dried white beans, soaked in 16 cups cold water overnight then drained.

  • 1 and a half cans of maple syrup (approx. 750 ml)

  • 1 piece of 1kg of smoked ham on the bone

  • 1 tbsp tomato paste

  • 1 white onion, peeled and coarsely chopped

  • 2 cloves garlic, peeled and crushed

  • 1/3 cup apothicari fire vinegar

  • 1/4 cup (60 ml) Domaine Small birch syrup

  • 1 good pinch of dried thyme

  • 7 to 9 cups water (enough to cover)

  • 1 pinch of salt

PREPARATION


  1. Place everything together in an enameled cast iron casserole dish, or other ovenproof dish, covered, at 275 degrees Fahrenheit for 6 to 8 hours.

  2. Remove from the oven and leave to stand at room temperature for 1 hour, uncovered, so that the beans can finish absorbing the cooking juices.

  3. Remove the bone from the ham, shred the flesh and mix well through the beans.

  4. Portion and freeze to have some for a while!


Notes:

  • Although it is not exactly the same: Birch syrup can be replaced with the same amount of molasses and apothicari fire vinegar can be replaced with the same amount of cider vinegar.
